Hi, we’re Trilogy Coffee Roasting Co. We are a small batch coffee roaster based in DeLand, Florida. Our coffee is specialty grade and ethically sourced with as much transparency as possible. The term specialty refers to the highest quality coffee in the world. We roast each batch of coffee according to a well-crafted roast profile to bring out the best inherent flavors. So, when you purchase Trilogy Coffee you can know that you’re buying fresh roasted high-quality coffee.

As you may have guessed from our name, we love stories. Our story began in 2014 as a small family business, selling our coffee at the DeLand Farmer’s Market in Artisan Alley. But what started as a part time hobby quickly turned into a full-time adventure, so on May 4th, 2015, we opened our first cafe inside our small roasting space. We lasted about a year until we were up to our eyeballs in coffee sacks. So, in 2016 we signed a lease on our current location and got to work, completely renovating a vacant storefront and attached garage on Georgia Avenue. Our cafe is just half a block away from our old spot at the Farmer’s Market and every day we are blessed with the reminder that you don’t have to go very far to make a big impact on others around you.

The name Trilogy is our response to a very basic question – what does it take to get a great cup of coffee? We answer this question by telling three related stories, Our CoffeeOur Company, & Our Community

The story of our coffee begins at origin – the countries, farms, people & cultures that produce the best coffee in the world. Farming is incredibly hard work, and great coffee is not possible without farms that are committed to quality control at every step of the way. Transparency is not only key to quality but also making sure that the people involved are being taken care of. 

The second story is about our company and the craft of roasting and brewing coffee to the highest standards. Our goal for roasting and brewing is to highlight the distinctive qualities of each origin.

Lastly, a great cup of coffee is not possible without our community. The Trilogy reaches its climactic ending when you, the customer, take in the sight, smell, and taste of our coffee. The coffee you enjoy is the final story from seed to cup, a story that is not possible without you.

Key Features of Each Coffee

Colombia Corazon y Alma

  • Description: Colombia Corazon y Alma is a beautiful example of a specialty coffee from Colombia. We named this coffee Corazon y Alma because it represents the heart and soul of who we are: complex and satisfying while being approachable and humble. We are delighted to be able to offer this coffee through our direct trade partners. This coffee comes from the region of Risaralda, one of the three department (or states) that comprise Colombia’s Coffee Triangle. Historically, and still today, this region of Colombia is the heart and soul of the coffee industry and this is exemplified by many of the local traditions. The Risaralda coffee is sourced from various small hold farmers all within the department of Risaralda.

  • Tasting notes: Medium roast with notes of cocoa, caramel & citrus.
  • Brewing Method: This is a great everyday coffee that will taste great with all brewing methods including pour over, drip machines, French press, and even as a single-origin espresso.

Espresso Sangre y Trueno

  • Description: Sangre y Trueno Espresso is a carefully selected blend of coffee from Colombia and Brazil. It is delicious served straight or with steamed milk. We roast it to a medium-dark level to give a good balance of body and sweetness with notes of dark chocolate, caramel, and dark fruit notes.
  • Country: Colombia & Brazil
  • Altitude: 1,200 – 1,700 m.
  • Variety: Caturra, Castillo, Colombia, Yellow Catuai
  • Process: Washed & Natural
  • Tasting notes: Medium-dark roast with notes of dark chocolate, molasses & dark fruit notes.
  • Brewing Method: This is a versatile coffee blend that not only tastes great as espresso but will brew perfectly in a drip machine and French press.

Trilogy Cold Brew Blend

  • Description: If you didn’t already know we make our home in central Florida, otherwise known as THE SUNSHINE STATE! Yes it gets hot, and humid, and yes there are alligators around. But all of that contributes to the beauty of living here. We created our Trilogy Cold Brew Blend to keep you cool, caffeinated, and satisfied in the Florida climate. Our cold brew is a daily companion for many of our customers and now we offer it to you here to share in a little bit of our Florida life.

  • Altitude: 800 – 1,700 m.
  • Variety: Varied based on seasonality
  • Process: Washed
  • Tasting notes: Medium roast with notes of cocoa, caramel, almond, and citrus.
  • Brewing Method: Coarse grind this coffee and steep in filtered water for 12-18 hours. We use an ounce of coffee per 8 ounces of water to make a concentrate then dilute to taste. But like any brewing method we suggest you experiment to fine tune it to your taste!

Trilogy Coffee Boulevard Blend

  • Description: Trilogy Coffee Boulevard Blend is the perfect cup of coffee to start your day. With notes of dark chocolate, navel orange, hazelnut, and honey sweetness this coffee pairs perfectly with your morning routine. The Boulevard is a nickname given to Woodland Blvd., the Mainstreet of our home city DeLand, Florida. We’re inspired by the people, businesses, and community that surrounds us and wanted to create a special coffee blend that motivates you to step out each day. Wherever you make your home and connect with your community, Trilogy Coffee Boulevard Blend is there to keep you moving.
